Zucchini -15 Minute Montreal Style



Why is it that when I bring up the word Zucchini at any given gathering that people get a nervous look on their face and quickly turn the subject around to other things?   The first answer is probably "What a dumb thing to bring up at a social gathering and the second answer is that they probably have soooo much zucchini in their gardens that they are already stressed about how in the world they are going to ever consume the vast amounts of summer squash that are coming their way!  So I am here to rescue you!  This is a very quick, very easy way to use up ALOT of zucchini fast!   

     Here is what you do.  Take a medium to large zucchini (If you have yellow and green use both, it looks really pretty)
and wash it, cut the ends off and then cut it into 5" x 1" wedges.  No need to be exact,  just wing it.  Get out a cookie sheet and some vegetable oil and Montreal Steak Seasoning in the shaker bottle. 

     Pour a small puddle of vegetable oil on the cookie sheet or a separate plate.  Lay a piece of zucchini in the oil and make sure each side has a thin film on it.  After coating the slices set them skin side down if possible separately on the sheet.  When all are done sprinkle them with the Montreal Steak Seasoning.  (Montreal Steak seasoning is very strong so don't over do it) 


Now place them in a 400F Degree oven for about 7 minutes.  Turn them with a spatula half way through. When they are tender they are ready!  Very Easy!! They really taste great too!  That's one squash down and a garden full to go!  Watch for more tasty zucchini recipes in the next 2 posts!

  2. Ahahaha. Too true - zucchini is very prolific! I love it, though, and this is the right time of year for this recipe! I don't know if my man will go for it, but that can't stop me from making it a night he has to work. =)
