Ranch BLT Chicken Tacos

Chicken Tacos
Summer is on the way and it is time to think about some great recipes for the hot days ahead.  This recipe is one of those recipes you will want to have handy.  ALL the time!!  It is fast and simple to prepare and doesn't take hours over a hot stove to make.  Just a few ingredients and a couple of steps to a taco bursting with flavor!  Try it, you'll like it!!

This is a recipe that is easily adjusted to make any amount to fit the amount of mouths to feed.  Each taco takes about 1/4 lb of chicken and 1/2 slice of bacon.  Multiply that by the number of tacos you need.  The recipe below is the way I make them but feel free to add more bacon and taco seasoning or less, make them the way you like them!  Enjoy!

    Cheesy Enchilada Casserole

    Easy family meals
This enchilada casserole is so flavorful and fun!  Your whole family will love it and it is easy to make!

                             ----------------------------------------------------------------------------------

    Cheesy Enchilada Casserole

    1 pound hamburger
1 large onion (chopped), minced onion or powdered onion may be substituted
2 1/2 cups salsa (Use the level of heat you like, I used La Victoria chunky, medium)
1 (15 oz) can black beans rinsed and drained
    1/4 cup Italian salad dressing
2 Tablespoons Taco Seasoning (I recommend Taco Bell Seasoning)
    1/4 teaspoon ground cumin
3 or 4 flour tortillas, 10 inch or the size of your pan
1  15 oz can of corn, drained
3/4 cup sour cream (reduced fat may be used)
2 cups shredded Mexican cheese blend

Brown beef and onions in a large frying pan and drain.

Stir in the salsa, beans, corn, dressing, sour cream, taco seasoning and cumin.  Layer 1/3  of the beef mixture in the bottom of a 2 quart baking pan.  Sprinkle 1/3 of the grated cheese on top.
Place 1 1/2  of  the tortillas on top of the cheese and then repeat.
The top layer will consist of the last 1/3 of your meat mixture and the last of your cheese.  Cover pan and bake at 400 degrees F for about 25 minutes or until hot and bubbly.  Serve with chopped tomatoes, lettuce, and cilantro if desired.

Soft and Delicious Homemade Flour Tortillas - Part 3

     Soft and Delicious Flour Tortillas

(Part 3 of Sweet Chicken Tortilla Salad)
I forgot to take the picture.  The one with the tortilla folded over and looking pliable and soft... But these tortillas can do that- really- I just forgot to take the picture.  I think I was in a hurry to get dinner on the table and topped them too quickly but I hope this pic shows how really wonderful they are.  Here is a picture of them in a meal.

    See? Soft, delicious.
You won't want to go back to store bought after trying these.  If it seems like it is time consuming then the best thing to do is make them up when you do have time and freeze them in batches of how many you use.  They come out of the freezer great. ( I take them out of the plastic bag one at a time still frozen and let them sit at room temperature for a little while to thaw so they don't stick together).

I searched through a bunch of recipes and found that they are quite a bit the same.  The things that vary are the amount of shortening, use of baking powder, dough resting time,  and water temperature.  I took them all and put together one that I like best and here it is!

    Flour Tortillas

     2 cups flour
    1 teaspoon salt
    1 teaspoon baking powder
    2 Tablespoons shortening
1/2 to 3/4 cup very hot water

Mix dry ingredients together in a bowl.  Add 1/2 cup hot water and stir. (I do use tap water but Hot is important). Keep adding small amounts of water until the dough comes together smoothly.  (Too much will make it sticky).
Now, cover the bowl with a slightly wet cloth and let it rest for 15 minutes.  Divide dough into 5 or 7 pieces.  It will make 5 large ones or 7 medium.  I usually at least double this recipe to make some to freeze.  Roll each dough piece into a ball and then using a little flour on your surface, begin to roll out. Push rolling pin in a different direction each time to help them stay round.  Roll very thin (see pic).  Heat skillet to a little above medium (one mark).  Fry tortillas in the ungreased pan until bubbles form.  Turn and cook other side until light brown spots appear.

Southwest Avacado Ranch Dressing- Part 2

    Southwest Avocado Ranch Dressing

I have tried many recipes that try to imitate the tomatillo Ranch dressing from a local restaurant called Cafe Rio's.  Likely, it was just me but none of them ever really was a good imitation.  The flavor just wasn't there.  Then after working with a few recipes and combining the best ideas, it happened!  Just the right combination of ingredients make this amazing!  You can adjust the heat by using more or less Jalapeno and cayenne pepper.  I like mine with just a little more kick than mild so here it is:
(Part 3 to Sweet Chicken Tortilla Salad)
    Southwest Avocado Ranch Dressing

Combine in a small food processor or blender:

1/2 small to average ripe avocado
1/2 cup Ranch Dressing (I use a Hidden Valley mix with milk and mayo)
1 small diced jalapeno (1 inch to 1 1/2 inch)
1/4 to 1/2 tsp. cayenne pepper to taste
    1 Tablespoon lime juice
3 sprigs of chopped cilantro (optional, but it is sooo good!)

Blend all together until smooth. Store in refrigerator.

    Isn't that beautiful?

This dressing can be used for with many foods.  I use it with Sweet Chicken Tortilla Salad
